My kitchen TV just died. I am having trouble finding a good 19 inch TV. I'm wondering if I could just buy a 19 inch computer monitor with 1080p resolution and HDMI port and speakers instead of a TV. Will that work? Has anyone done this sucessfully? Is there anthing in particular I should know?

I imagine it would be as simple as just connecting an HDMI cable from the mini to the monitor.

Yes you can. It's just a matter of preference really on how good of resolution you want and if the monitor has built in audio. If it does not have audio/speakers you will need to buy some.

Most monitors don't have speakers, nor do they work with a remote. An actual TV would be cheaper and simpler.
