Novice with a (probably) dumb question: Can I use the coax cables already installed in my house, the ones which the TV signal already passes through, to set up a new MOCA network? Or do I need to run new coax for the network only? Any help would be greatly appreciated!

You can do either. A separate coax will isolate the coax from the TV signals entirely and does not require a POE filter.

Caution: a MoCA network without a PoE filter is probably a bad idea, even if it is on its own coax. The PoE isn't just for security, it also enhances MoCA signal levels for better communication between MoCA devices.
