I can't see how to get the cables loose without flexing the little circuit board alot,
You just have to be very careful.
You can hold the power connector on the adapter (you've got one of the JMicron chipset based adapters with a regular size 4 conductor male pins in socket arrangement, and not on of those floppy drive type deals, right?) firmly with one hand and use some healthy needle-nose pliers to lever out the power connector, but the 40 pin part you'll have to wiggle off very carefully. If you can, have it plugged into a SATA drive and hold it tight against the drive with one hand while you wiggle the plug (don't pull on the cable, pull on the plug), first one end, then the other.
