I am sure this has been talked about before, but can't find it.
My GF decided to record the Michael Jackson memorial today and we came upon a very interesting issue. The Michael Jackson memorial is not coming up when searched for in the TV data guide. To try and combat this she decided to record all the shows in the time frame that the memorial would be running.
How do we record something that isn't listed? There has to be an easier, more official way of doing this.

Setting up a Manual Recording for the time & channel you wish to record is the easiest way.

Where can that be found in the menus? And can this be done via the Tivo.com website?

From Tivo Central, go to Find Programs > Record by Time or Channel > Set up Manual Recording.
And can this be done via the Tivo.com website?
No, I don't think so. The web site relies on guide data.

I was kind of amazed that none of the channels seemed to have it in the guide data (I only checked a couple), even though several had been mentioning for *days* that they were starting at 10AM PST.
I think I still left one manual recording on one of my Tivos, but I also just started a ~7 hour manual record on my non-Tivo recorder before I left for work. (At the lowest video quality, lowest audio quality.. If I had more room, I would have done it at higher audio quality in case some of the singing turns out decent.)
now I just hope I didn't lose power at home..

That's what I did. Recorded about eight or ten shows, from Today Show all the way to Nightly News. Wasn't sure how long it was supposed to last or when it would start. Kinda kludgy but it worked.

Kept waiting and waiting for the guide to update. Like you, I knew it would show the service, since it was known for several days. Finally gave up, and last night I set it to record every show on NBC from 7am to 6pm.
I realized today while I was at work that what if the guide update came in overnight, and all the shows I set to record didn't because "The show you requested is no longer in the guide". I would be PISSED!
My luck held. :)
