Did Jon Stewart just say, "How about from now on, dog sh** is money, and we call park benches mansions?"
I mean, unbleeped... and closed captioning confirmed it. I'm watching the 11pm broadcast and they bleeped a bunch of stuff later in the segment.
Did that just slip by the censors?

It's cable. Content and language is entirely self-moderated. The FCC has no jurisdiction on content.

The F bomb gets through every once and a while as well. It's only censored for the prudish advertisers.

The "S" word  is getting through several shows on cable. If you watch Ramsey's Kitchen Nightmares on BBCA it gets through all the time.

Um, this is the same channel that aired the South Park "Words of Curse" episode :D

I thought I've seen Comedy Central air uncensored stuff later (like 1am or so), and sometimes have seen bleeped and unbleeped versions of the same show because of that.
I was just surprised to hear the sh-bomb go through at the 11pm broadcast, especially since they were bleeping other stuff.

Comedy Central does however usually (of its own accord) bleep out "s**t" (the famous South Park episode being an obvious exception :)). TDS gets bleeped pretty consistently, even the 11pm braodcast.
They'll run movies in the 2am slot that they specifically advertise as "uncensored", and those run without bleeps, although they do edit the nudity.
If you watch the same episode of 'Reno 911' in different timeslots, you'll notice the bleeping policy is a little more lax with the later showings.
It's no big deal when an s-bomb slips through because, as you said, the FCC has no jurisdiction. But in the case describe by the OP, it probably was unintentional.

The Closer usually has about one "sh*t" or "bullsh*t" and/or "a**hole" per episode now. Gives a more realistic feel to a cop show, IMO. NYPD Blue was doing this for a while. The FCC rules do apply to broadcast, but the rules are relaxed after 10:00 PM, but ever since the whole Janet Jackson thing, they stopped that stuff once someone realized that all of the 10:00 network shows actually air at 9:00 in certain time zones.

I wish there was something in the guide data to tell my Tivo when these uncensored or less-censored airings of Comedy Central shows (like their roasts) will air so I can make sure it records the right airing.

Usually you should just aim for anything after midnight.
As for the roasts however, I made a point of recording the 2am episode of the Saget roast and it was still bleeped. Maybe the earlier airings were bleeped even more, I don't know.
IIRC, the Pam Anderson roast was also bleeped no matter what the airtime, but many months later it was rerun late at night specifically under the "uncensored" banner and it was de-bleeped.
So it may not be in the guide data, but it will be in the promos.

I wish all the focus groups were as smart as those old Jewish folks.

1:00 A.M., actually -- they do that because that way the unbleeped material will air after 10:00 even for satellite viewers on the West Coast.
I think the problem with last night's TDS is that the censor was so busy with Rob Riggle's segment, that he/she forgot about that one word from Jon. Would be interesting to see if they bleeped it for today's daytime reruns.
