Wow ... as a Reality TV "ho" it's hard ;) to narrow it down to 5 but here goes ...
1) AMAZING RACE (early seasons were better)
2) SO YOU THINK YOU CAN DANCE
3) AMERICA'S BEST DANCE CREW
4) MAKING THE BAND (w/ Danity Kane mostly but I liked O-Town too)
5) tie between TOP CHEF/PROJECT RUNWAY (interesting to watch shows about stuff I know NOTHING about :) )

I Survived a Japanese Game Show...some people used less than 5, I'm picking up the slack.
I also watch America's Got Talent (love the autistic singer kid), Top Chef (buy some Glad), Baby Borrowers (much more interesting than I expected), Wife Swap, Kitchen Nightmares, Deadliest Catch, Mythbusters, The Ultimate Fighter, Gene Simmons, The Two Coreys, Pros vs. Joes, whatever that show on Spike was about the Detroit SWAT team and I always get sucked into The Surreal Life, hopefully the long rumored next season eventually happens and includes some of the rumored people.
I also wish Discovery would bring back Last One Standing.

I don't think of shows like Man vs Wild, Survivorman, It takes a thief, Deadliest Catch, as reality shows. Those are more like documentaries to me. I know it's a hard line to draw though.

I think those are the real reality shows.
After all, Cops is the original reality show.
Shows like Survivor, The Mole, etc are game shows. There's very little reality taking place. But, for whatever reason, those are the shows people think of when "reality TV" is mentioned.
Bear showing how you can be stranded in the African desert and get a "drink" by squeezing the moisture out of fresh elephant dung is a lot more real than someone finding a fake idol on a nice beach. :p
That's just my view on the subject.
I know what the majority are talking about when they mention reality TV.

There's more about the controversy here (http://news.bbc.co.uk/2/hi/entertainment/6911748.stm). The British version, anyway.
Personally, I don't know that Bear ever claimed to be spending all of his time out in the elements.
Rather, the show is more about things that you could do out in the wilderness.
Unfortunately, he's not out there competing for a million bucks, a restaurant job, or something similar. :p

I love Deadliest Catch but I just don't consider it Reality TV like I do Survivor or Amazing Race.
Shows like "Deadliest Catch", "Ice Road Truckers", or for that matter, "COPS", are far closer to the definition of "reality" than many so-called "reality shows."
While there has been some creative editing, and overemphasis on certain events with these programs, these shows basically depict what a group of people do for a living. You can't get much more "real" than that.
I don't consider shows like "Survivor", "The Apprentice", "Hell's Kitchen", or similar programs to be a "reality show" but rather simply a variation of a game show, in which participants undergo a series of exercises and challenges towards the ultimate goal of winning.
