At least with regard to Psych -- I believe the episode is in-the-can, and given that it is, specifically, a holiday show, it will almost surely be broadcast as scheduled.

Reading further, Monk already has a bunch of scripts completed for its next season, so surely the script for that Monk episode is all set.
