I need a quick opinion regarding the noise level on Seagate 500GB (ST3500630AS) and 750GB (ST3750640AS) SATA hard drives. Are they essentially the same or is one louder than the other?

I haven no personal experience with these drives but I usually check out the reviews on on www.newegg.com
I highly recommend them for hardware. Great service.

Newegg is a great site, as are a few others.
But checking the manufacturers site is also a great help!!!
They are the same HD, just a different size. There is no difference in noise between the two. But:
They are Barracuda 7200 Drives. Very noisy! Almost as noisy as the Raptor 10000 Drives.

the samsung spinpoint T series is quite quiet. they offer a 500gb unit, "SAMSUNG SpinPoint T Series HD501LJ 500GB 7200 RPM SATA 3.0Gb/s Hard Drive - OEM" on newegg.
-- there is also a 750 option, but appears to currently be sold out on newegg.

Now that my 500 gig is filling up I noticed I can hear it when no other sound is in the room. It's very faint and hard to hear at 6 feet but hearable if you know what the sound is. Not too bad for the price savings.
