What cut of lamb was that? I tried repeatedly to understand what he was saying, but couldn't figure it out. That recipe looks relatively easy, and quite tasty.

Now I just need to figure out where I'd find such a cut.
A "saddle" is usually a large loin cut from either side of the backbone (ie where a saddle would go).
A butterflied leg of lamb would probably work as well.

Yeah, I was thinking I could use leg of lamb. That I can get at Costco. Though it probably wouldn't be as nicely shaped.

It was interesting to see him interact with those customers. He may be a total bastard in the kitchen, but the man sure is smoother than his mashed potatoes when it comes to mingling with the people out front.
By the way... my wife has a brutal time understanding him as well. Not me though, I guess I've watched enough crap from across the pong that I don't have much of a problem.

It's worth asking a butcher around you, since saddle of lamb is a lot more tender than leg of lamb.
(The downside of spending a few weeks in London is that I've already seen half of Series 2 of F-Word, so this one was a repeat for me).
