I recently bought a S2 standalone and put lifetime on it, with the intention of giving it as a gift.
Do I have to keep the service until my rebate gets processed, or can I transfer the service over beforehand?
I'm afraid that if I transfer it now, when they process the rebate they'll see that *I* do not have service on the unit, and make it invalid?

I can tell you my experience from a couple of years ago. I bought a TiVo as a gift for my father, and he activated it under his own name. I had no trouble getting the rebate myself - all that seemed to matter was that it WAS activated and that I had the necessary proof of purchase.
This is not a predictor of what would happen in your situation, but I would guess that as long as the unit is activated, it does not matter who is the "account owner".

I bought a TiVo last year that was free after rebate. Since I didn't have cable & my wife (then fiancee) did, we put it in her house & activated it in her name. I got the rebate just fine. But that was before the one-year commitment thing, and it was always in her name.

I did the same thing a little while back. Should be fine. Tivo doesn't care WHO activates the box, just that it's activated. And they should care even less with lifetime involved.
