I already have a Hughes HDVR2 Series 2. If I want to zipper that one and a PHILIPS DSR7000 DVR, will I need two 6.2 images to zipper or can I use 1 instant cake type CD for both? Thanks.

There are a couple ways to do this. As you stated, you can use an InstantCake image to install on your new drive. I believe I've read that you can use the image on any SD Directivo, but that the system name on the system information screen will then show up wrong for one of the units, but that doesn't impact anything.
The alternative is to use mfstools to copy the 6.2 image from your original drive to a new, larger drive. This is very easy and fast to do, and you can then put the original drive on a shelf and use it as a backup image if ever needed later.
I've recently zippered three DTivos: I used an instantcake image for one, simply upgraded the existing disk on the second as it was already large enough, and used mfstools to copy the image for the third to a larger disk. All of the upgrades worked great with no problems.
